Soybeans contain from 25 to 35% of protein. Soybean oil cake production allows to obtain 39 … 42% of protein. Soybean meal production is characterized by 40 … 48% soybean protein content. The soybean oil protein isolate contains up to 70% protein.
Soybeans contain trypsin inhibitors, which are anti-nutritional substances that prevent the absorption of soy protein when eaten.
The brief pressure treatment at high temperature in the soybean extruder reduces the content of trypsin inhibitors.
The own processing of soybeans guarantees food consumers the safety of protein conditions, an acceptable level of trypsin inhibitors and the absence of non-protein impurities.
The increase in the mass fraction of protein in soybean products is due to the extraction of other nonprotein substances from beans.

How to process soybeans:
There are two main methods how to processing soya beans, namely extraction and mechanical processing.
Extraction processing involves the use of chemical reactions to extract fats and carbohydrates from soybeans.
Mechanical processing includes crushing, sorting, grinding, compressing and high temperature processing.
Both methods can be combined.
For example, initially 8 … 17% of oil is mechanically pressed to get a soybean cake with oil content of 7 … 8%, and then soybean meal with oil content of 0.5 … 2% is produced in the extraction reactors.

For efficient soybean oil extraction process, the following requirements should be met:
Optimal soybean moisture content (for maximum oil yield): 8 … 9%.
To optimize the extrusion and pressing processes, the soybean is dried immediately before processing.
Light and heavy impurities are removed
If necessary, it is divided into fractions
Content of impurities does not exceed 3%

It is more effective to start the line, work for 40 hours without stopping and then stop the equipment, than 5 times per week start working, heat up the extruder and press, enter the quality production mode, and then 5 times stop the line and clean the screw parts.

During the production of soy cake and oil, up to 3% of moisture evaporates from raw materials. During the processing of 24 tons of soybeans per day evaporates up to 720 kg of water.
KEY POINTS for successful project implementation:
Dry the soybean up to 8 … 9% of humidity.
The soybean moisture content before processing has a strong effect on soybean oil yield and residual oil content of the cake.
For soybean storage, the humidity of up to 12% is considered normal.
But if soybean is processed at such moisture content, oil yield will decrease by 4 … 5%, protein content in the cake will be lower by 3 … 4%, and its residual oil content will be of 10 … 12%.
The processing of the soybeans with a moisture content of 8% will increase soybean oil production process by 0.7 … 0.9 t/day
REGULARLY check urease activity, it is a quick method to evaluate the content of trypsin inhibitors in soybean oil cake, and at the same time it is a tool to monitor product quality.
Urease activity should be within 0.05 … 0.2 pH.
At this rate, during processing, the protein retains its functional properties, namely solubility, fat-binding and moisture-binding capacity.
If the urease activity is less than 0.05 pH, then the protein has undergone excessive heat treatment and has lost its functional properties.
If the urease activity is greater than 0.2 pH, due to insufficient thermobaric treatment the content of trypsin inhibitors remains too high.
Urease activity of 0.05 … 0.2 pH indicates high protein conditions in the produced cake.
